You say tomato, I say tomato.

Homemade salsa: Throw tomatoes, cilantro, and jalapenos (preferably from your garden) in the blender with some onions and lime juice.  Blend, but leave the mixture a bit chunky.  Drain out some of the excessive juice.

Bread Salad (also better with tomatoes and basil from your garden).

I Just Went Through Every Bowl I Own

It’s Saturday.  What have I been up to?  To keep up with the abundance that summer’s bounty offers, I have been cooking.  Jam and I started the day at the farmer’s market and then headed to the Arcade for a diner style breakfast. Since, I have been cooking up a storm in preparation for both the week and the Levitt Shell concert tonight (one of my favorite things about Memphis).  Today, I made the following:

Potato Salad

Risotto Rice Pudding

Homemade Granola

Mint Tea

– Cucumber Sandwiches with Dill Cream Cheese

– Lime, Honey, Buttermilk Dressing with Green Onions and Basil

Honey Yogurt Blueberry Popsicles

Babies, babies, babies.  I have a go-to CD for new babies that has needed very little updating over the years.  The first copy of this cd was created years ago and I continue to burn and gift when new little baby friends enter the world.  There have even been a few adults that have become quite addicted, hence the “For Babies Only” title.

What’s Cookin’?

Farms (and some folks’ gardens!) are starting to pop with produce.  These days, my nothing-to-do weekends typically turn in to culinary creations that try and take advantage of whatever has sprouted that week.  This weekend I made the following.  They were all simple, made mostly with things I had at home since I don’t love filling my weekends with trips to the grocery.

Saturday Dinner

– Herb and Parmesan Ravioli from the market tossed with butter from fridge, basil from garden, and parmesan from the fridge.

– Side of Foccacia from the market.

– Salad with lettuce from my garden tossed with a dressing made of olive oil, honey, red wine vinager, mustard, yogurt, garlic, salt and pepper (all from fridge or pantry).

Sunday Lunch

– BLT made with bacon from the market, lettuce from my garden, basil from my garden, and tomatoes from the market on Foccacia from the market.

– Mint Tea made with Lipton Tea from cabinet and mint from my garden.

– Plum Ice Cream made with plums from the market.

Summer Bounty
